Banana Oat Pancakes

Pancakes are my favorite weekend breakfast, but I love making them healthier with bananas and oats. These banana oat pancakes are fluffy, naturally sweet, and filling. They’re easy to make and don’t require flour, making them perfect for a lighter breakfast that still feels indulgent.

    • 1 cup rolled oats
    • 1 teaspoon baking powder
    • 1/2 teaspoon cinnamon
    • 1 teaspoon vanilla extract
    • Butter or oil for cooking

    Instructions

    1. Blend bananas, eggs, oats, baking powder, cinnamon, and vanilla until smooth.
    2. Heat a skillet over medium heat and lightly grease.
    3. Pour batter into the skillet for each pancake. Cook until bubbles form, then flip and cook until golden.
    4. Repeat with remaining batter.

    • Add blueberries or chocolate chips for variety.
    • Serve with honey, maple syrup, or yogurt.
    • Keep warm in the oven while cooking the rest.
