Quinoa Veggie Bowl

    This is what I eat when I want to feel good but also satisfied. A colorful bowl of quinoa, roasted vegetables, and a simple lemon dressing. It’s fresh, filling, and full of texture.

    What You’ll Need:

    • 1 cup cooked quinoa
    • 1 cup roasted vegetables (carrots, zucchini, peppers, etc.)
    • 1 tablespoon olive oil
    • 1 teaspoon lemon juice
    • Salt, pepper, and herbs

    How I Do It:
    I toss everything together in a bowl, drizzle with olive oil and lemon juice, and season it to taste. Sometimes I add feta cheese or chickpeas for extra protein.

    Why I Love It:
    It’s balanced, vibrant, and keeps me fueled all day.

    Bonus Tip:
    Make extra roasted veggies — they keep well and make great leftovers.
