Cheesy Vegetable Quesadilla

    Quesadillas are my favorite go-to snack or light meal. Cheesy, crispy, and filled with fresh veggies, they’re simple to make and impossible to resist. Perfect for entertaining or a quick weekday snack, this recipe is flexible — you can add any vegetables or proteins you love.

    Ingredients

    • 4 flour tortillas
    • 1 cup shredded cheddar cheese
    • 1/2 cup bell peppers, diced
    • 1/2 cup mushrooms, sliced
    • 1/4 cup onions, diced
    • 1 tablespoon olive oil
    • Sour cream or salsa for serving

    Instructions

    1. Heat olive oil in a skillet over medium heat. Sauté onions, bell peppers, and mushrooms until tender.
    2. Place a tortilla in another skillet over medium heat. Sprinkle half of the cheese evenly.
    3. Spread the sautéed vegetables over the cheese, then sprinkle remaining cheese on top.
    4. Cover with second tortilla and cook until golden and crispy, flipping carefully.
    5. Remove from heat and slice into wedges.

    • Use mozzarella or pepper jack for different flavors.
