Blueberry Muffins

    Nothing beats freshly baked blueberry muffins. I love waking up to the aroma of warm muffins straight from the oven. They’re moist, sweet, and loaded with juicy blueberries. This recipe is perfect for breakfast, snacks, or even dessert. Plus, it’s easy enough to bake on a weekday morning!

    Ingredients

    • 1 1/2 cups all-purpose flour
    • 3/4 cup sugar
    • 1/2 teaspoon salt
    • 2 teaspoons baking powder
    • 1/3 cup vegetable oil
    • 1 egg
    • 1/3 – 1/2 cup milk
    • 1 cup fresh or frozen blueberries

    Instructions

    1. Preheat oven to 400°F (200°C) and line a muffin tin with paper liners.
    2. In a bowl, mix flour, sugar, salt, and baking powder.
    3. In another bowl, combine oil, egg, and milk. Mix well.
    4. Pour wet ingredients into dry ingredients and stir until just combined.
    5. Gently fold in blueberries.
    6. Fill muffin cups about 2/3 full and bake for 20–25 minutes until golden.
