A healthy alternative to regular fries, these Baked Zucchini Fries are crispy outside and soft inside. Perfect as a snack or side.
Ingredients:
- 2 zucchinis, cut into sticks
- ¼ cup breadcrumbs
- ¼ cup Parmesan
- 1 egg, beaten
- Salt and pepper
Instructions:
Dip zucchini sticks in egg, then coat with breadcrumbs and Parmesan. Bake at 425°F (220°C) for 20 minutes, flipping halfway.
Tips: Serve with marinara or aioli.
