These Carrot Cake Muffins are moist and spiced, perfect for snack time or breakfast. I developed them to enjoy cake without the guilt of large slices.
Ingredients:
- 1 cup flour
- ½ tsp baking soda
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ½ cup brown sugar
- 1 egg
- ¼ cup oil
- 1 cup grated carrots
Instructions:
Mix dry ingredients. Whisk wet ingredients separately, combine, fold in carrots. Bake at 350°F (175°C) for 20–25 minutes.
Tips: Add raisins or nuts for extra flavor.
