Chocolate Lava Cake

Chocolate lava cake is my ultimate indulgence. Rich, gooey, and chocolatey, it’s perfect for special occasions or a decadent treat after dinner. I love making these cakes because the molten center never fails to impress. Plus, they’re surprisingly easy to prepare with simple ingredients.

    Ingredients

    • 1/2 cup unsalted butter
    • 100g dark chocolate, chopped
    • 2 eggs
    • 2 egg yolks
    • 1/4 cup sugar
    • 2 tablespoons all-purpose flour
    • Pinch of salt
    • Butter and cocoa powder for ramekins

    Instructions

    1. Preheat oven to 425°F (220°C). Butter and lightly dust ramekins with cocoa powder.
    2. Melt butter and chocolate together in a heatproof bowl over simmering water. Stir until smooth.
    3. In another bowl, whisk eggs, egg yolks, and sugar until pale and fluffy.
    4. Fold melted chocolate mixture into the eggs. Sift in flour and add a pinch of salt, gently folding until combined.
    5. Divide batter among prepared ramekins and bake for 12–14 minutes until edges are set but centers are soft.
    6. Let cool for 1–2 minutes, then invert onto plates and serve immediately.

    Tips & Variations

    • Serve with vanilla ice cream or fresh berries.
    • Sprinkle a little sea salt on top for contrast.
    • Use milk chocolate for a sweeter, less intense version.
