Coconut Mango Smoothie Bowl

    Bright, creamy, and packed with tropical flavor, the Coconut Mango Smoothie Bowl is one of my favorite ways to start the day. There’s something about the combination of sweet mango and creamy coconut that instantly transports me to a sunny beach, even on the busiest mornings. I first made this smoothie bowl on a weekend when I had ripe mangoes that needed to be used. Blending them with coconut milk created a thick, luscious base that was perfect for spooning into a bowl and decorating with fresh toppings.

    Ingredients

    • 1 cup frozen mango chunks
    • ½ banana, frozen or fresh
    • ½ cup coconut milk
    • ¼ cup Greek yogurt (optional for extra creaminess)
    • 1 teaspoon honey or maple syrup (optional)
    • Toppings:
      • Fresh berries (strawberries, blueberries, raspberries)
      • Sliced kiwi
      • Granola
      • Toasted coconut flakes
      • Chia seeds or nuts

    Instructions

    1. Prepare the base.
    In a blender, combine frozen mango, banana, coconut milk, and Greek yogurt if using. Add honey or maple syrup if you like your smoothie bowl slightly sweeter. Blend on high until smooth and creamy. The mixture should be thick enough to eat with a spoon. Add a little more coconut milk if needed to help the blender process but keep it thick.

    2. Pour into a bowl.
    Transfer the smoothie mixture into a bowl, spreading it evenly. The thick texture allows you to create an appealing base for your toppings.

    3. Add toppings.
    Arrange fresh berries, kiwi slices, granola, and toasted coconut flakes over the smoothie. Sprinkle with chia seeds or nuts for crunch. The toppings not only add texture but also make the bowl visually stunning with vibrant colors.

    4. Serve immediately.
    Smoothie bowls are best enjoyed fresh. Grab a spoon and dig in! The combination of creamy mango-coconut base with fresh, crisp toppings is a delightful mix of flavors and textures in every bite.
