If comfort had a flavor, I’m convinced it would be garlic butter. These roasted potatoes are my guilty pleasure — golden, crispy outside, and melt-in-your-mouth soft inside.
You’ll Need:
- 500g baby potatoes
- 2 tablespoons melted butter
- 2 cloves garlic, minced
- Salt and black pepper
- Fresh parsley
How It Goes:
I cut the potatoes in half, toss them with butter, garlic, salt, and pepper, then spread them on a baking tray. Into the oven they go — 400°F (200°C) for about 25 minutes, until golden and crisp.
When they come out, I toss them with a sprinkle of parsley and just stare at them for a second (because yes, they’re that beautiful).
Little Secret:
Sometimes I add parmesan cheese in the last five minutes of baking — it melts perfectly.
Perfect With:
Literally anything. Or nothing. I often eat them straight from the pan.
