Spinach & Cheese Quesadilla

    Quesadillas are a lifesaver when I want a quick and tasty snack. This spinach and cheese version is my favorite — creamy, cheesy, and packed with flavor. They’re easy to assemble and perfect for serving when friends drop by or as a light lunch.

    Ingredients

    • 4 flour tortillas
    • 1 cup shredded cheese (cheddar or mozzarella)
    • 1 cup fresh spinach, chopped
    • 1 small onion, diced
    • 1 tablespoon olive oil
    • Salsa or sour cream for serving

    Instructions

    1. Heat olive oil in a skillet and sauté onions until soft. Add spinach and cook until wilted.
    2. Place a tortilla in a pan over medium heat. Sprinkle half of the cheese evenly.
    3. Spread the spinach and onion mixture over the cheese, then top with remaining cheese.
    4. Cover with a second tortilla and cook until golden brown, flipping carefully.
